Baconized Shrimp

Ingredients for 2 large servings:
12 slices bacon - thick sliced
1.5 pounds shrimp - peeled, de-veined, tails pulled (I use 31-40 size)
2 TB cajun seasoning blend (I use Penzey's)

Directions:
Cut the bacon into 1.5 inch long pieces, separate them, and put them all in a large 12" skillet. Cook, stirring as needed, about 80% of the way done (to your taste for bacon). Choose a heat for your skillet that matches how fast you want this to cook. Remove from heat. Using paper towels, absorb about 80% of the bacon fat. Return to heat untill bacon starts cooking again. Put in shrimp, dust with half of the seasoning, then stir. Dust with the remaining seasoning. Stir every minute or so until the shrimp are cooked almost through, Remove from heat. The shrimp will still cook for about 1 minute after removing from the heat. Serve & eat!

Notes: scales up or down pretty easily, as long as your skillet isn't too full. Can change the proportion of ingredients to taste or according to what is on hand. Can use other seasonings besides cajun. I have done this same thing with leftover steak bits in place of the shrimp. Sometimes I start the bacon on a slow temp, then amp up the heat when hubby walks in the door so that I can get dinner on the table quickly.

Baconized shrimp

This was delicious and very quick to make. I had unexpected company at lunchtime and just so happen to have a pound of shrimp in the fridge. Great time to test a recipe, right? Everyone loved it. I don't even think it needed the bacon. I just loved the idea of tossing the shrimp with cajun seasoning and maybe a little butter would have been good. At any rate, I think it was terrific.

Good and Simple

Just finished this recipe and am giving it a 4, Was just a bit under seasoned for my taste. I will for sure make it again though, adding a 1/2 cup chopped onion to the pot along with the bacon and tough of salt after I dish up my share. Hubby thought it was great, I asked what he thought and he looked at me with chipmunk cheeks and nodded his head in approval. Servings listed are way to large for just 2 servings (at least the way we eat) I will get 4 nice servings from this recipe. It was very easy and quite simple to make. Done in a snap if you don't count preparing fresh shrimp.

I disagree....I thought it

I disagree....I thought it had a lot of taste and my cajun seasoning was old. Can't imagine how great it would be if the seasonings were fresher.
