Chicken Francese

Here's my low carb version of the classic Chicken Francese ... a family and friend favorite. No one can beleive it's low carb:

Ingredients:

* 1 pound thin cut boneless, skinless, chicken breasts
* 2 TBS Soy Flour
* 3 eggs
* 2 ounces grated Romano cheese
* dash of pepper (white or black)
* 1 tsp dried parsley
* olive oil
* 1/2 cup chicken broth
* 1/2 cup unsalted butter
* 1 lemon (juice of)

Directions:

* Lightly coat chicken breasts with soy flour - put aside
* Put oil in a skillet over medium heat -- 325 if using an electric skillet
* Whisk eggs, cheese, pepper and parsley together -- add 1 TBS water if mixture gets too thick
* Coat both sides of the chicken with mixture, allow excess to drip off, then place in hot oil
* Fry each side until lightly golden, about 3 minutes per side
* Remove from skillet and keep warm
* Repeat with remaining chicken
* In the skillet bring the chicken broth the a light boil
* Add the butter, stirring constantly until melted
* Add juice of one lemon, cook for 1 minute stirring constantly
* Pour sauce over chicken

I serve this with broccoli and a low carb rotini (Dreamfields).
