Banana Split Cheesecake

Butter 13x9 inch casserole dish.
Heat Oven to 350 degrees

Crust:
2 cups almond flour, or well-ground nutmeal (40g, 24g fiber)
1/4 cup butter, melted
2-3 tbsp Brown Sugar Twin (2g) (Canadian cyclamate version, or use Splenda)

Filling:
1 1/2 lb cream cheese, softened (3 8 oz packages) (24g)
1/2 box of SF banana creme Jello-brand pudding (12g)
1/4 tsp banana extract (or a few squirts of DaVinci banana syrup)
1/4 cup heavy cream (1.7g)
3 eggs (1.8g)
1/4 cup liquid cyclamate (sweetener equal to 1 cup sugar) (0g)
1/2 *small* (6-inch) banana (12g - 1g fiber)
(if you don't mind carbs, recipe okay too without)

Topping:
1/2 small banana, *very* thinly sliced - and dipped in: (12g - 1g fiber)
1 tbsp lemon juice (.5g as you throw away most of it)
(*note* - again banana may be omitted if desired)
1 cup strawberries, very thinly sliced (12g - 4g fiber)
1/4 cup sliced almonds (4g, 3g fiber)
1 oz unsweetened chocolate (8g, 4g fiber)
1/4 cup butter
1 tbsp liquid cyclamates (sweetener equal to 1/4 cup sugar) (0g)

Mix ingredients for crust and spread out on bottom of casserole dish. I
usually need to do this with my hands which I keep wetting with water
to keep from getting sticky. Put casserole dish in oven while preparing
the filling. Should cook at least 5 minutes.

For filling combine all ingredients in a large bowl and blend with
electric mixer until very smooth.Remove dish from oven, pour filling into
dish and spread evenly across the dish. Return to oven and cook until
filling is firm and set in the middle, about 30-40 minutes but can be more
or less depending on your oven.

Allow to cool. When cool take the banana slices which have been dipped
in lemon juice and place evenly across the top of the cheesecake. Then
do the same with the strawberries. Sprinkle the almonds evenly across
the top.

Then melt the chocolate and butter together in microwave. I usually let
the butter melt first, then continue to stir until the chocolate melts
in the hot butter. You don't want the chocolate to burn. Add in the
sweetener. Drizzle evenly over the top of the cheesecake. Allow to chill,
then cut into squares and serve. May be served with whip cream for more
of a Banana Split effect.

With Banana: 130g 37g fiber)

Banana Split Cheesecake

This was awesome! I made it for our 2-year-old's birthday. He's a big banana fan (we try to limit them) and gobbled it up. My wife says I can make it for her birthday, too:)
I used Splenda instead of cyclamate and it worked great.
