Mexican Chocolate Smoothie Recipe

I got the okay from my publisher to post a couple of recipes per month from the new ones I'm coming up with to expand 15 Minute Low-Carb Recipes. This morning's smoothie was so wonderful I had to share!

Mexican Chocolate Smoothie

The combination of chocolate, vanilla, and cinnamon is classically Mexican, and enchanting. Try this!

3/4 cup cottage cheese
1/4 cup sugar-free vanilla syrup
1/4 cup water
1/4 cup vanilla whey protein powder
1 tablespoon cocoa powder
1/4 teaspoon cinnamon
4 ice cubes
guar, xanthan or glucomannan -- to thicken

Throw everything from the cottage cheese through the cinnamon in your blender, and start it running. Add the ice cubes one by one, waiting till one is ground up before adding the next. When all the ice is in, thicken to taste with guar, xanthan or glucomannan -- I used 1 teaspoon of glucomannan, and it was perfect. Pour into a glass and enjoy!

Would adding flax seed or

Would adding flax seed or meal make it more filling if you didn't use the protein powder?

Flax

I would guess flax meal might, but it might add some nutty flavor, too. Not necessarily a bad thing, just not as neutral a flavor as some of the other things.

Whey protein

Is there a way to make the recipe without the protein powder?
Is it necessary?
I'm lactose intolerant and can find substitutes for everything but that!

substitute for whey

If you have a protein powder that you like the taste of and you can use without getting sick, try that. Soy comes to mind first of all but it's rather strong. They also have other vegetable proteen powders. I've never tasted them but got some smoothie receipts that used them and the reviews said that some of them were mild tasting and smooth. It would be worth a try and you might find a new staple.

Leave out the Protein Powder?

You can leave it out, but of course your smoothie will be less filling. You might increase the cottage cheese. You'll also want to add a teaspoon or so of vanilla, to get the vanilla note in the flavor combination.

Another possibility is to add a raw egg or two, if you're not afraid of them. We're not afraid of them here, but then, we get super-fresh eggs from our very own chickens. I feel the risk of raw eggs in general has been over-blown, so long as we're talking uncracked, properly refrigerated eggs, but I certainly can't say there's no risk at all.
