Pork rind cookies

Are fabulous! Dana, I hope you include this recipe in your new 15 min. book. I know they need 1-2 hours of chilling, but, as my brilliant wife pointed out, (while she and our 2 year-old son were licking the bowl) you can be eating delicious cookie "dough" in 2 minutes flat!
